This apricot creme brulee dish is an original recipe that seduces the whole family!
Ingredients to make the apricot puree
- 1 cup of apricot (peeled & sliced)
- 1 tablespoon fresh lemon juice
- 2 tablespoon water
Ingredients necessary to cook the creme brulee
- 4 cups of heavy cups
- 1/2 cup apricot puree
- 1/2 cup + 1/4 cup granulated sugar
- 6 large egg yolks
- 2 teaspoons pure vanilla extract
- 1 pinch of sea salt
Preparation to make your apricot puree
- Start by adding your apricots, water and lemon juice in a low heat pan. Make sure to constantly stirring until the flesh begins to soften (about 5 minutes)
- Place your preparation in a bowl and mash it until smooth. We can advise you to use a blender to have a finer puree
- Set aside
Now, let’s prepare the apricot creme brulee
- Start by preheating your oven at 325 degrees
- You can put your apricot puree with heavy cream in a over medium heat saucepan
- Bring to a simmer and remove from heat
- With a fine mesh strainer, strain the mixture before placing it in a large mixing bowl
- In another mixing bowl, whisk together 1/2 cup sugar with yolks until light and frothy
- Slowly temper the egg mixture into the cream mixture & whisk until well blended. Now, you can stir in the vanilla & sea salt
- Split the preparation into 6/8 ramekins and place them in a large rimmed tray
- Make sure to fill in the pan at the halfway and bake for 50 minutes
- Carefully remove the creme brulee from the water bath and place the dishes directly in the fridge, until the custard sets (about 4 hours)
- When you are about to serve, sprinkle the top with sugar and caramelize it with a kitchen torch or oven broiler
