Now, let’s prepare the apricot creme brulee

  1. Start by preheating your oven at 325 degrees
  2. You can put your apricot puree with heavy cream in a over medium heat saucepan
  3. Bring to a simmer and remove from heat
  4. With a fine mesh strainer, strain the mixture before placing it in a large mixing bowl
  5. In another mixing bowl, whisk together 1/2 cup sugar with yolks until light and frothy
  6. Slowly temper the egg mixture into the cream mixture & whisk until well blended. Now, you can stir in the vanilla & sea salt
  7. Split the preparation into 6/8 ramekins and place them in a large rimmed tray
  8. Make sure to fill in the pan at the halfway and bake for 50 minutes
  9. Carefully remove the creme brulee from the water bath and place the dishes directly in the fridge, until the custard sets (about 4 hours)
  10. When you are about to serve, sprinkle the top with sugar and caramelize it with a kitchen torch or oven broiler
