Belgian waffles

Here is the recipe for the Liegoises waffles  ! Unique and easy recipe that will please everyone.

Liegoises waffles for breakfast


  • 250g of flour
  • 2 pinches of salt
  • 1 piece of sugar
  • 21g of fresh baker’s yeast
  • 1 tablespoon of brown sugar
  • 10cl of milk
  • 2 eggs
  • Pearl sugar (Chouquette sugar)

Here are the few instructions to cook real Liegoises waffles!

  1. Dilute the crumbled yeast in the warm milk with a piece of sugar
  2. In a bowl, pour the flour and a pinch of salt and mix, make a well in the middle, pour the milk-yeast mixture, the melted butter and the two egg yolks
  3. Mix well and knead by hand for 5 minutes
  4. Cover with a cloth and let is swell for 40 minutes
  5. Climb the whites to firm snow with the last pinch of salt
  6. Add pearl sugar and brown sugar to the dough with a wooden spoon and then by hand
  7. Take a tablespoon of whites and add to the dough by mixing well
  8. Pour the rest of whites in snow and with a wooden spoon gently add to the dough
  9. Cover and let stand for 30 minutes
  10. Heat your waffle iron and cook for about 2 minutes
