When summer is popping up, what we want is to be able to enjoy fresh and good food. A generous, healthy dish that you will love to share with your friends! Here it is a French Salade Niçoise that you will love! 

Ingredients to make your salade Niçoise

  • 1 medium radicchio, cored and thinly sliced
  • 2 handfuls fresh string beans, ends trimmed
  • 1 head of green leafy lettuce, torn
  • 2 medium heirloom tomatoes or a pint of cherry tomatoes
  • 1 can oil-packed tuna, drained and separated into pieces
  • 14.5 oz can of cannellini beans, drained and rinsed
  • 4 red potatoes, sliced ¼” thick

Parsley Vinaigrette’s ingredients

  • 1 T. capers
  • 1/2 cup of flat leaf parsley chopped
  • 1/3 cup olive oil
  • 3 T. lemon juice
  • 2 t. white wine vinegar
  • 1 clove garlic, minced
  • salt and pepper to taste

Preparation to make a French Salade Niçoise

  1. Start by boiling water in a saucepan
  2. Before cooking your green beans for 3 minutes until they are bright green, remember to season with a pinch of salt.
  3. Then, to stop cooking, you can transfer the beans in a ice water bath
  4. Boil the sliced potatoes in the water of the pan. We advise you to cook until fork tender.
  5. Then, chill in a ice bath
  6. Now, you can drain the tuna and the cannellini beans
  7. Finally, you can start to place the lettuce, radicchio and sliced tomatoes on your dish

Let’s make the Parsley Vinaigrette

  1. Mix together: olive oil, lemon juice, white wine vinegar, garlic, flat leaf parsley and black pepper. Make sure your preparation is well mixed
  2. Last but not least: Add capers and stir. Taste to see if you need to add salt. Most of the time, capers are already salty
  3. Pour the dressing over your salad
